Executive Pastry Chef is the Ambassador of Café Dior in House of Dior. This position is responsible for all aspects of production to the highest professional standards in the kitchen and Christian Dior Couture brand standard. While overseeing the preparation & production of all menus in Café Dior, Executive Pastry Chef is responsible for new menu creation for various events to meet customer satisfaction, update of seasonal menu, the quality of presentation, maintaining a high standard of sanitation and hygiene resulting to achievement of qualitative and quantitative objectives.
Responsabilità del ruolo
- Manages all production of pastry, bakery and brunch products including planning and quality & quantity control to demonstrate exemplary and ensure the implementation of Christian Dior Couture brand standards
- Displays upmost creativity in new menus and products, adaptability to the market and flexibility in customer demands as well as feedback from local and central team to elevate standard of product for Café Dior and events
- Collaborate with Café service and related teams to create new menu and production for various events of House of Dior to be successful
- Ensures proper order and reception management for all products including raw materials from suppliers to check supplies and inventories for smooth running of the inventory each month and shrinkages reduction for cost management
- Enforces the highest standards of hygiene, sanitation and cleanliness in the kitchen
- Coaches kitchen team to identify their development needs while optimizing human resources by effective schedule management, performance assessment and etc.
- Continuously provide training to team to use products, materials and equipment according to standard and philosophy of House of Dior
- Communicate effectively through organizing meetings and reporting to monitor quality, service and production malfunctions to establish action plans promptly regarding operations concerns
Profilo
- At least 15 years of relevant working experience
- Experience "high end" French pastry
- Artistic sensibility for pastry, cuisine and lifestyle
- Experience in management of menu creation, production, people and cost
- Excellent leadership and communication skills with strong sense of team spirit
- Knowledge of Gourmets and Computer literacy, well-versed in MS Office
- Good command of English is an asset
- Customer-oriented
