For the third edition of its Residences from November 9-11, Château d'Yquem welcomes Mauro Colagreco for Métamorphoses, a unique and ephemeral experience.    

Les Résidences d’Yquem were conceived to welcome singular voices, offering a space for creative freedom and embodying the spirit of the château. Three days bring together the soul of Yquem – its terroir, its history, its slow transformation – and the chef’s visionary cuisine around three themes that inspire and unite them: Nature, Humanity, and Time.    

The three-Michelin-starred chef of Mirazur, named the best restaurant in the world in 2019, Mauro Colagreco champions a circular, attentive and respectful cuisine, working the soil, letting nature speak and celebrating the moment. This vision takes on its full meaning at Yquem, where every vintage is a lesson in patience and humility.   

During a three-day sensory journey, Métamorphoses explores the convergence of three forces: Nature, with its generosity and sometimes unpredictable biodiversity; Humanity, bringing expertise and precision; and Time, which gives Yquem its singular depth. This journey is an ode to slowness and balance, where nature, the human hand and time come together to create memorable flavors and emotions.    

Métamorphoses is not just a menu, it is a staging of our connection with the world. In the rare intimacy of Château d’Yquem, Mauro Colagreco crafts a tribute to the passage of time, to fragile balance, to legacy.
